I eat my veggies…especially when they are covered in cheese and baked in a pie shell!  Yum.  The best part about veggie pie is that you can put whatever you like in it. This recipe is my preference, it has heirloom tomatoes, mushrooms, spinach, red onions, pesto, feta and cheddar, but there are endless cheese and veggie combos that would work. Just put your favorite vegetables in a pie crust, cover it with cheese (and egg) and bake it! (The trick is to arrange your sliced vegetables in a beautiful way. Don’t just throw them in. Create food art!)

This is one of those recipes that is more of a guideline, so I’m not going to bother with exact measurements and stuff. I use pre-made pie crust because let’s be honest, why would you make your own crust when you can just mess up the edges…
