RIANATA is a characteristic pizza of Trapani and its province. The dough is made just like regular pizza – flour, yeast, water and salt. Roll it out thickly. The topping is made with cherry tomatoes cut in half, anchovies, chopped garlic, LOTS of OREGANO, and grated pecorino cheese.
